Smoothies are great, right? Delicious, nutritious… But honestly I am too lazy to bother blending together a bunch of fruity ingredients that my family is already happy to eat whole. BUT, if there’s a delicious way to get, say, GREENS, into me, my kids and husband (without having to use a truckload of fruit for a fruit-masked green smoothie) – I’m on board. And that’s what happened with this recipe. Spinach, or other greens if you are up for experimenting, is a dominate ingredient in this smoothie, but does NOT dominate the flavor. Spinach is available fresh and local nearly year-round, and is easy to grow at home too! We don’t add any refined sweeteners – just a ripe banana and a couple dates if you choose. The raw cacao provides 20x the antioxidant power of blueberries, plus transforms our “green smoothie” into chocolaty goodness. Choose any nuts you have on hand for some protein – even substitute a nut butter if that’s all you have. The only additions besides these is ice and water, leaving you with a high-protein, high-vitamin, high-antioxidant smoothie that’s not high in sugar (even natural sugar) like a typical fruit smoothie.

I have no problem getting the ingredients smooth in my bullet-style blender – just follow the instructions regarding the order in which you blend everything. If you have a high-power blender, you can put everything in at once.

Here’s proof that my littlest one – who I am still trying to win over to salads and cooked greens – downs these smoothies without hesitation. That’s a win!

Instructions
  1. Place the spinach, water, nuts, dates and cacao in a blender and blend until smooth. Place the nuts and dates closest to the blade.
  2. Add banana and ice to the blender and blend until smooth. Enjoy!
